I receive about 10 eggs a day.

I started keeping chickens about 7 years ago when an acquaintance gave me an abandoned chicken.

Waste chickens are chickens that have been culled at egg farms, but they lay two to three eggs a week.

After that, we expanded our system to 2 birds, then 6 birds, then 15 birds.

  • Chicken manure can be used as fertilizer for fields

  • Feeding, watering, and picking up eggs every day. Rooms are cleaned several times a year.
  • Of course, there are no daily walks.
  • For one chicken, a kennel-sized home is OK.
  • It’s not that there’s a lot of healing, but it’s a lovely presence.
  • Feeding costs are low. 110g/day/wing.
  • The food at the home center costs just under 2,000 yen for 20 kg, so the feeding cost is 10 yen/day/bird.

I have a few friends who buy eggs, and I have a small amount of income.

Tama-lier, an egg sommelier, is a certification issued by the Japan Egg Industry Association.

“Tama-lier” means “egg sommelier”.
“Egg Sommelier” is a title given to people who correctly understand the knowledge about eggs.
You can obtain qualifications in 3 ranks: “1 star, 3 star, and 5 star.” We hope that
those who have obtained the Tama-lier qualification will actively and happily work as evangelists who spread the wonders of eggs to the world!

★★★ Three Star Tama-lier

If you have basic knowledge about eggs and can properly explain things to people around you,
then if you get the one-star Tama-lier, you should definitely try the three-star one! !
There are tons of questions that will test your knowledge about egg and poultry farming!

★★★★★ Five Star Tama-lier


The best Tamalier is someone who has comprehensive knowledge about eggs and is recognized as an egg professional ! Only people who have comprehensive knowledge about eggs and can disseminate their knowledge as egg professionals and who have been involved in the egg business for 5 years or more are eligible!

It’s a very easy-to-understand system for learning things you don’t know about eggs.

Considering the learning process

The 3-star Tama-lier test will be held at the Tokyo venue in June and at the Osaka venue in October.

If you pay the examination fee of 3,300 yen at the time of recruitment, you will receive the official text “Egg Sommelier Handbook”.

There are 50 multiple-choice questions in total, and you must pass if you score 85 points or more within the 60-minute time limit. Successful applicants will receive a certificate, badge, and card.

I would like to take this opportunity to study systematically and carry out the process of acquiring it effectively.

Bonus: How to make raw-egg-on-rice

I, egg of Tamago sommelier, introduce a rich raw-egg-on-rice that is a step above the rest.

I know it’s rich with just the yolk, but the white is a waste.

Then, mix the whites into the rice first!

Material

  • Eggs (whole eggs)
  • Approximately 100g of piping hot rice (lightly 1 cup in a bowl. If anything, it’s on the small side)
  • Soy sauce

How to make

  • Pour only the egg white into an empty bowl.
  • Spread piping hot rice over the whites.
  • Mix well.
  • The whites will feel a little firm due to the heat of the rice.
  • Shape the rice and place the remaining yolk in the center.
  • Add soy sauce.
  • First, taste the white rice,
  • Then, enjoy the rich raw-egg-on-rice while breaking the yolk!

Even with the same ingredients, you can enjoy a completely different taste than mixing them all together!
